Lobster Noodle Salad
Nova Scotia lobster is the star of this cold noodle salad with bright herbs and a sweet and sour Vietnamese-inspired dressing. Allow the mint and cilantro to wake your pallet and the overall light flavours to showcase our delicious lobster.
|225 g||rice noodles|
|2 lbs||cooked Nova Scotia lobster, shelled and roughly chopped|
|1 small||cucumber, thinly sliced|
|½ cup||mint leaves|
|½ cup||cilantro leaves|
|¼ cup||peanuts, toasted and crushed|
|1||fresh red chile, thinly sliced|
|1 cup||warm water|
|½ cup||lime juice|
|¼ cup||fish sauce|
|½ tsp||chile flakes|
Directions (serves 6):
- Cook noodles according to package directions. Drain and cool.
- Whisk together dressing until the sugar is fully dissolved. Toss together noodles, lobster, cucumber, fresh herbs, and dressing. Garnish with peanuts and chilies.
