Seasons by Atlantica Seafood Chowder

Ingredients

1/2 cup butter
2 cups potatoes, large dice
1/2 cup celery, medium dice
1 cup Spanish onion, medium dice
1/4 cup all purpose flour
1/2 cup carrots, medium dice
1 litre milk, heated
1 1/2 halibut stock, heated
1 litre 35% cream
2 tbsp rosemary, finely chopped
1 cup haddock
1/2 cup large black tiger shrimp
1/2 cup large scallops
 1/2 cup lobster meat

Directions

  1. Melt butter in large stock pot
  2. Add onion, celery and potato, cook until the onions are translucent
  3. Add flour to make a roux- cook for 5 minutes on low heat
  4. Add carrots, increase heat to medium
  5. Add milk and halibut stock, stir with a whisk to dissolve any lumps
  6. Cook chowder mixture for 15 minutes at medium heat, taste to make sure it is not starchy
  7. Add seafood and reduce the heat and gently cook until seafood is finished
  8. Season with salt and pepper
