Why do you, or why is it important to support local? We have supported local since we opened December 9th, 2000. For us it is a no brainer. You know the origins of your product. Because it is local, it travels less and is fresher. Smaller carbon footprint as well. By supporting local you are making an ethical investment in your local economy as well. You keep your money local. It is a win-win situation for all.
What is a piece of advice you have for home chefs? Cooking should always be regarded as a form of play. Once you understand this, all fears seem to fade away and you can have fun. Even if you do mess things up, 9 times out of 10 you can still eat your disaster 🙂
What is your favourite kitchen “tool” or gadget? Tasting spoon
What is your favourite item on your menu? Grilled local swordfish with a spicy corn relish
What is the best thing about being a chef? Creative freedom
What is your guilty pleasure? Cherry Garcia, ruffles (all dressed)
What is the one Taste of Nova Scotia product that you can’t live without? Sugar Moon Farm maple syrup
Aside from your own restaurant, what other Taste restaurant to you frequent? Chanterelle Country Inn & Cottages
What is your ultimate comfort food ? Anything that is confit
What is the best meal you have ever had? I’ve had some pretty good ones so far but I hope the best is still to come!
