Herby Peach Mozzarella Salad

Fresh, juicy peaches meet creamy mozzarella and garden herbs in this vibrant salad. Tossed with golden breadcrumbs and a bright basil vinaigrette, it’s a simple showstopper in just 15 minutes.
Serves: 6
Time: 15 minutes
Ingredients – Vinaigrette
| 2 tbsp | White vinegar |
| 3 tbsp | Chopped basil |
| 1 1/2 tbsp | Dijon |
| 2 tsp | Honey |
| 1/2 cup | Safflower oil or other neutral oil |
Toasted Breadcrumbs
| 1 cup | Breadcrumbs |
| 2 tbsp | Butter |
Salad
| 1 ball | Mozzarella (ripped into bite sized pieces) |
| 3 large peaches | Sliced into bite sized pieces |
| 2 cups | Basil (torn or small leaves) |
| 4 tbsp | Chopped parsley |
| 1 small bag | Mixed greens |
| 1 small bag | Spinach |
Instructions
1. In a small bowl, whisk together white vinegar, dijon, basil and honey.
2. Next, slowly add oil, in a slow stream, while whisking vigorously, until the vinaigrette thickens and becomes foggy. Set aside.
3. For the breadcrumbs, melt butter in a large frying pan on medium-low heat. Add the breadcrumbs to the pan, in a thin layer, and toast until golden brown and fragrant.
4. Add a few pinches of salt, stir, and set aside in a bowl to cool.
5. In a large bowl, add mozzarella, peaches, parsley, basil, greens and spinach. Drizzle the dressing over the top, toss gently with hands or tongs, sprinkle with breadcrumbs, and serve immediately.
