McKelvie’s Seafood Pie
Who doesn’t love Nova Scotia seafood? To celebrate Pi(e) Day, why not try this Seafood Pie recipe from McKelvie’s for supper tonight!
Ingredients
12 oz | Prepared Pie Dough (or your own homemade dough) |
2 cups | Bechamel Sauce (see recipe below) |
6 oz | Nova Scotia Salmon |
6 oz | Nova Scotia Haddock |
4 oz | Baby shrimp |
2 tsp | Pesto |
2 oz | Steamed diced potato, celery, carrot, onion |
Whisked egg, for brushing pie crust |
(We suggest getting your veggies from a local market: Stirling Fruit Farms, Masstown Market, Noggins Corner Farm Market or your local Farmers’ Market)
Directions
1. In a large bowl, mix all ingredients except the pie dough
2. Divide among 4 oven-proof dishes
3. Spread dough over dishes and crimp the edges
4. Brush with egg and pierce with fork
5. Cook at 350 degrees for 30-40 minutes
Bechamel Sauce Ingredients
4 tbsp | Butter |
4 tbsp | Flour |
2 cups | Milk (we suggest: Fox Hill Cheese House) |
1/2 tsp | Salt |
1/8 tsp | White pepper |
Bechamel Sauce Directions
1. Over medium heat, melt butter
2. Add flour, mix and continue cooking while stirring often for 5-8 minutes
3. Add milk in 4 stages, stirring and letting thicken in between
4. Finish with salt and pepper.
