Below The Salt Distillery is an ultra small batch, top shelf distillery producing spirits of exceptional quality and distinction. Gregg Colp has been distilling for forty years and through his extensive travels as a sea captain is privileged to have honed his craft from those who generously shared their knowledge in the Caribbean and Europe.
Our grains are floor malted the traditional way at Horton Ridge in the Annapolis Valley. Our honey is sourced locally. Our sugar is Certified Organic from Central and South America.
We produce everything in house from scratch – no blends or imported spirits are used. We are proud to be true Nova Scotia terroir.
