Bulwark Spiced Apple Cider Cake
Ingredients
3 cups | All-purpose or gluten-free flour |
1 tsp | Baking soda |
1 1/2 tsp | Cinnamon |
1/2 tsp | All spice |
1/2 tsp | Ground cloves |
1/2 tsp | Salt |
1 cup | Shortening |
2 cups | Brown sugar, packed |
2 | Eggs, beaten |
1 cup | Raisins |
473 ml | BULWARK Original Cider |
1 cup | Walnuts or pecans, chopped (optional) |
Pear Cider Glaze
1 1/4 cup | Icing sugar |
3 tsp | Tapioca startch |
1/4 tsp | Cream of tartar |
1/4 tsp | Salt |
3 tbsp | Bulwark Pear Cider |
Instructions
1. Preheat oven to 350F.
2. Whisk together flour, baking soda, cinnamon, allspice, ground cloves and salt.
3. Toss raisins and nuts with 3 tbsp of the flour mixture and set aside.
4. In a separate bowl, cream brown sugar and shortening until light and fluffy.
5. Beat in eggs until smooth.
6. Alternate adding fl our mixture and Bulwark Original Cider to wet ingredients, approximately 1/3 of each at a time. Mix until well combined.
7. Stir in raisin and nut mixture.
8. Spread into greased and floured bundt pan.
9. Bake 50 – 60 minutes. Cool for 10 minutes before removing from pan. Place on a wire rack with parchment paper underneath; allow to cool completely before glazing.
10. To make the glaze, sift icing sugar, tapioca starch, cream of tartar and salt together.
11. Add 1 tbsp of Bulwark Pear Cider at a time; stir until completely smooth.
12. Spoon over entire cake and allow to set before serving.
Optional
For a non-alcoholic option, substitute Bulwark 0.5% Original for the cake and use 0.5% Winter Warmer for the glaze.
