McKelvie’s Nova Scotia Seafood Chowder

Ingredients
2 1/2 oz | butter |
1/4 cup | onion |
1/4 cup | celery |
1/4 cup | carrot |
1 cup | diced potato |
2 1/2 oz | flour |
4 cups | fish stock |
1/4 tbsp | fresh rosemary |
1/4 tbsp | white pepper |
1/4 tbsp | garlic powder |
1/4 tsp | dried oregano |
2 1/2 cups | 18% cream |
6 oz | salmon pieces |
6 oz | haddock pieces |
4 oz | baby shrimp |
Directions
1. Sweat onion, celery, carrot and potato in butter until softened
2. Add flour, mix and cook for 5-10 minutes
3. Start adding fish stock 1-2 cups at a time, stirring and letting thicken between batches
4. Add spices and cream, bring back to a simmer and add seafood
5. Cook for about 10 minutes more, add salt to taste and enjoy!
