Morning Glory Muffins
Ingredients
1 cup | flour |
1 1/4 cup | sugar |
2 tsp | baking soda |
2 tsp | salt |
1 | apple (we recommend: Noggins Corner Farm Market, Stirling Fruit Farms, Masstown Market or Scotian Gold Co-operative) |
3 | eggs |
3/4 cup | carrot, grated |
2 tsp | cinnamon |
1/2 cup | dried local cranberries |
1/4 cup | pecan pieces |
1/4 cup | coconut |
3/4 cup | corn oil |
2 tsp | vanilla extract |
Directions
- Sift the dry ingredients together and set aside.
- Combine the carrots, cranberries, pecans, coconut and apple.
- Whisk together the eggs, oil and vanilla.
- Toss the carrot mixture into the dry ingredients. Then add the liquid ingredients, stirring just until combined.
- Portion into well-greased large muffin cups and bake at 350 degress farenheit for approximately 25 minutes.
Recipe does not work as it is written. There is no way that there should be more sugar than flour in a batter…
