Nova Scotia Snow Crab with Heirloom Carrot & Kohlrabi
This Nova Scotia Snow Crab with Heirloom Carrot & Kohlrabi is the perfect light summer dish. Using local produce and snow crab, this meal is as fresh as it gets. Pair with your favourite local wine and you have a delightful meal to enjoy on the patio!
Ingredients
Serves: 4
Carrot Pickles (Part A)
3 | Coloured local heirloom carrots |
3 tsp | Kosher salt |
3 tsp | Extra virgin olive oil |
3 sprigs | Fresh tarragon |
Carrot Pickles (Part B)
1 cup | White wine vinegar |
1 cup | Pure white vinegar |
1 cup | Water |
1 cup | Sugar |
1/4 cup | Fresh orange juice |
1 tbsp | Mustard seed |
Crab Mince Mayonnaise
1/4 cup | Snow crab mince meat |
1/4 cup | Mayonnaise |
1 tsp | Smooth Dijon |
2 tsp | Lemon juice |
1/2 tsp | Tabasco |
Kosher salt, to taste |
To Assemble
Shelled leg meat of 1 snow crab | |
1 | Kohlrabi |
2 tsp | Lemon juice |
2 tbsp | Extra virgin olive oil |
Sumac | |
Crushed cashews | |
Carrot pickles | |
Crab mince mayonnaise | |
Salt and pepper, to finish | |
Sprouts, to garnish |
Directions
Carrot Pickles
- Peel each carrot lengthways with a vegetable peeler keeping each colour in separate bowls.
- Season each bowl with 1 sprig of tarragon, 1 tsp salt and 1 tsp extra virgin olive oil.
- Combine all of part b in a pot and bring to a boil, then immediately split liquid evenly between the bowls. These can be made ahead of time and left in the fridge submerged in pickle liquid for a more enhanced flavour.
Crab Mince Mayonnaise
- Combine all ingredients in a bowl and whisk together.
To Assemble
- Whisk together lemon juice and olive oil. Season with a pinch of salt and fresh cracked pepper.
- Cut skin off kohlrabi and slice thin. Season gently with lemon vinaigrette mixture.
- Place crab mayonnaise on bottom of the plate followed by leg meat dressed with remaining vinaigrette
- Arrange carrot pickles and kohlrabi on top and garnish with crushed cashews, a pinch of sumac and sprouts.
