Seasons by Atlantica Maritime-Inspired Chowder

Ingredients
| 1/2 cup | butter |
| 2 cups | potatoes, large dice |
| 1/2 cup | celery, medium dice |
| 1 cup | Spanish onion, medium dice |
| 1/4 cup | all purpose flour |
| 1/2 cup | carrots, medium dice |
| 1 litre | milk, heated |
| 1 1/2 | halibut stock, heated |
| 1 litre | 35% cream |
| 2 tbsp | rosemary, finely chopped |
| 1 cup | haddock |
| 1/2 cup | large black tiger shrimp |
| 1/2 cup | large scallops |
| 1/2 cup | lobster meat |
Directions
- Melt butter in large stock pot
- Add onion, celery and potato, cook until the onions are translucent
- Add flour to make a roux- cook for 5 minutes on low heat
- Add carrots, increase heat to medium
- Add milk and halibut stock, stir with a whisk to dissolve any lumps
- Cook chowder mixture for 15 minutes at medium heat, taste to make sure it is not starchy
- Add seafood and reduce the heat and gently cook until seafood is finished
- Season with salt and pepper
