Dr Kombu Brewing Company is set in a fully-restored barn perched on a hill in New Ross where we produce Sòlas Kombucha in our HACCPcertified brewery, from brewing and fermentation to bottling and shipping. Our varieties use spices, herbs, and local no-spray fruits. As complex as a wine or beer, with varying brewing methods and an infinite number of tea/ flavouring combinations, kombucha is as exciting as its alcoholic cousins, and with proven benefits due to its richness in probiotics, is also the most healthful of the bunch.
With partnerships and creative collaborations, we are honoured to be among Nova Scotia’s most dynamic businesses showcasing local. Our products are widely available rurally in Annapolis, Kings, Digby, Queens, and Lunenburg counties; as well as throughout the Halifax Regional Municipality, and to our neighbours in PEI and New Brunswick.
