DECEMBER 11: Meadowbrook Meat Market – Mincemeat Cheesecake
Be the star of your Christmas parties, and family get-togethers this year when you show up with this mincemeat cheesecake. This delicious recipe is made with Meadowbrook Meat Market’s very own Mincemeat!
Ingredients
| 1 cup | Vanilla Wafer Crumbs |
| 1/4 cup | Room temperature butter |
| 1 3/4 cups | Mincemeat |
| 4 cups | Miniature marshmallows |
| 1/3 cup | Orange juice |
| 1/2 cup | Whipping cream |
| 2 8 oz. packages | Cream cheese |
| 2 tsp. | Grated orange rind |
| for decoration | Candied red and green cherries |
| for decoration | Almonds |
Directions
- Mix the vanilla bred crumbs and butter together and press into pan, then let chill
- Top base with 1 3/4 cups Mincemeat
- (Mixture 1) Stir together the orange juice and marshmallows over heat, until marshmallows are melted, then chill
- (Mixture 2)Whip the whipping cream, adding the cream cheese and orange rind
- Combine mixture 1 & 2 and pour over base, then let chill.
- Decorate with mincemeat, almonds, and candied red and green cherries
