Lobster Noodle Salad

Nova Scotia lobster is the star of this cold noodle salad with bright herbs and a sweet and sour Vietnamese-inspired dressing. Allow the mint and cilantro to wake your pallet and the overall light flavours to showcase our delicious lobster.
Ingredients:
| 225 g | rice noodles |
| 2 lbs | cooked Nova Scotia lobster, shelled and roughly chopped |
| 1 small | cucumber, thinly sliced |
| ½ cup | mint leaves |
| ½ cup | cilantro leaves |
| ¼ cup | peanuts, toasted and crushed |
| 1 | fresh red chile, thinly sliced |
Dressing:
| 1 cup | warm water |
| ½ cup | lime juice |
| ⅓ cup | sugar |
| ¼ cup | fish sauce |
| ½ tsp | chile flakes |
Directions (serves 6):
- Cook noodles according to package directions. Drain and cool.
- Whisk together dressing until the sugar is fully dissolved. Toss together noodles, lobster, cucumber, fresh herbs, and dressing. Garnish with peanuts and chilies.
