Lobster Roll Potato Salad
What two things go together better than fresh Nova Scotia lobster and potato salad? This is our take on the combination of the classic lobster roll and potato salad. By matching the zest of the lemon and tang of the mustard, our salty Nova Scotia lobster is highlighted beautifully in this simple, yet succulent dish.
Ingredients:
1 ½ pounds | baby potatoes, halved |
¼ to ⅓ cup | mayonnaise (to suit your preference) |
1 tbsp | finely chopped chives, plus more for garnish |
zest of one lemon | |
1 tsp | lemon juice |
1 tsp | whole grain or Dijon mustard |
1 ½ to 2 lbs | cooked Nova Scotia lobster, shelled and roughly chopped |
1 | celery stalk, finely diced |
salt and pepper to taste | |
Directions:
- Bring a medium-large pot of water to a boil; add potatoes. Cook 14-16 minutes or until fork tender. Drain and cool.
- In a medium to large bowl, whisk together mayonnaise, chives, lemon zest, lemon juice and mustard. Stir in lobster meat, potatoes and celery. Season with salt and pepper to taste.
- Serve garnished with chives.
