Maple Miso Mustard Carrots

Take a straightforward side dish and ‘wow’ your dinner mates with this sweet and salty roasted carrot side dish for your holiday dinner!

Yield: 8-10 servings
Time: 10 minutes active
40 minutes cooking

Ingredients

10 Medium/large carrots, peeled and sliced 1/2 inch think
1/2 cup Maple syrup
1 1/2 tbsp Miso paste (can substitute with soy sauce)
2 tbsp Dijon mustard, grainy or smooth
2 tbsp Vegetable oil or olive oil
3 tbsp Thyme or rosemary, chopped

Instructions

1. Preheat the oven to 400 degrees

2. In a large mixing bowl combine maple syrup, miso paste, Dijon, oil and herbs, whisking until thick and emulsified.

3. Add carrot slices into the bowl and using a spoon or rubber spatula, stir until all carrots are evenly coated.

4. Line a large baking sheet with parchment, and pour the carrots onto the baking sheet, spreading them out so they lay flat, and are not touching or crowded.

5. Roast for 35-40 minutes or until the carrots are tender and caramelized.

6. Remove from oven, serve with your favourite holiday meal, and enjoy!
