Maple Miso Mustard Carrots

 

Take a straightforward side dish and ‘wow’ your dinner mates with this sweet and salty roasted carrot side dish for your holiday dinner!

Yield: 8-10 servings

Time: 10 minutes active

40 minutes cooking

Ingredients:

10 medium to large carrots, peeled and sliced ½ inch thick

1/2 cup maple syrup

1 ½ Tbsp Miso paste (substitute with soy sauce if needed)

2 Tbsp Dijon mustard, grainy or smooth

2 Tbsp vegetable oil or olive oil

3 Tbsp thyme or rosemary, picked and chopped

Instructions:

Preheat the oven to 400 degrees

In a large mixing bowl combine maple syrup, miso paste, Dijon, oil and herbs, whisking until thick and emulsified.

Add carrot slices into the bowl and using a spoon or rubber spatula, stir until all carrots are evenly coated.

Line a large baking sheet with parchment, and pour the carrots onto the baking sheet, spreading them out so they lay flat, and are not touching or crowded.

Roast for 35-40 minutes or until the carrots are tender and caramelized.

Serve with your favourite holiday meal!
