Smoked Mackerel & Caramelized Onion Dip
If you’re looking to change up your standard chips and dip look no further than this recipe for J. Willy Krauch’s Smoked Mackerel and Caramelized Onion Dip. This party pleaser easily pairs with chips, veggies, and it’s even good by the spoonful!
Ingredients:
1 tbsp | olive or canola oil |
2 | red onions, halved and thinly sliced, the cut into quarters** |
2 cups | sour cream |
3/4 cup | J.Willy Krauch brand smoked mackerel, flaked* |
1 tbsp | finely chopped chives |
1 tbsp | finely chopped parsley |
1/2 tsp | smoked paprika |
sea salt & ground black pepper to taste | |
3 | finely chopped chives, garnish |
good quality kettle chips |
Directions:
- In a medium skillet over medium heat, combine the oil and onions. Cook, stirring occasionally until the onions are caramelized, about 20 minutes. Remove pan from heat and let onions cool to room temperature.
- In a medium bowl, combine the sour cream, flaked smoked mackerel, chives, parsley, and smoked paprika. Roughly chop the cooled onions, then combine with sour cream mixture. Season to taste with salt and pepper. Cover and refrigerate at least two hours before serving.
- Place in your favourite serving bowl. Garnish with chopped chives and kettle chips.
