We need to be self sufficient and depend less on other areas to grow our food. Food is too powerful to let others control it.

What is the one Taste of Nova Scotia product that you can’t live without?
Nova Scotia Scallops

What is a piece of advice you have for home chefs?
Experiment often, sample lots and build your own palate

What is your favourite item on your menu?
Rack of lamb with port wine orange sauce

What is your favourite kitchen “tool” or gadget?
Metal Tongs 

What is the best thing about being a chef and/or owning your own restaurant?
You are your own boss and make your own decisions

What is your guilty pleasure?
Fried chicken with poutine and also Rappie Pie

What Taste restaurants do you frequent?
Chives and Fid Resto and many others too

What is your ultimate comfort food?
Dried meat and stinky cheese with crusty bread and red wine

What is the best meal you have ever had?
Fresh tomato with fresh blue potatoes and a fresh fried egg on an island on Lake Titicaca in Peru…and maybe also dinner at El Bulli in Spain ( Ferran Adria)

Have you cooked for any celebrities?
Richard Nixon, the Pope in 1984, Dudley Moore, William Hurt and a few more…
