Blueberry, Bacon and Quark Tart

A savoury dessert or a main dish, you decide! The combination of creamy cheese, salty bacon and herbs highlight our Nova Scotia blueberries beautifully. Balancing sweet and savory, this dish is guaranteed to please any palate.

Ingredients:

1 roll (225g) Store-bought puff pastry
1 cup Fox Hill Cheese House Quark Cheese*
¼ cup Heavy cream
1 tbsp.
Chopped rosemary, plus more to serve
1 tbsp.
Chopped thyme, plus more to serve
1 tbsp.  Acadian Maple syrup**
1  Egg
4 slices Meadowbrook Meat Market bacon, sliced***
¾ cup Wild Nova Scotia blueberries (fresh or frozen)
Microgreens or shoots, to garnish

Directions:

1.Preheat oven to 375°F. Roll out the dough and press into a 9” tart pan. Bake 10 minutes until it starts to set. Meanwhile, heat a large skillet over medium heat. Cook the bacon until crisp. Transfer to a paper towel lined plate.

2.Whisk together the quark, cream, herbs, maple syrup, and egg until smooth. Pour into the prebaked crust. Sprinkle with bacon and blueberries. Bake until golden brown and set, about 30 minutes.

3. Serve garnished with additional herbs and microgreens or shoots.
