Oysters Rockefeller Paired with Jost Tidal Bay
Nothing says “treat yourself!” like spinach and gruyere Oysters Rockefeller, and nothing says “treat yourself more!” like pairing it with Jost Vineyards’ Tidal Bay. Savoury, cheesy, and rich, these oysters are the perfect Friday evening treat to enjoy with a well-deserved glass of wine.
Ingredients
Serves 4
24 | Nova Scotia oysters |
3/4 cup | local white wine |
1 clove | garlic, smashed |
1 clove | garlic, minced |
pinch of sea salt | |
1/4 cup | butter |
1/2 cup | onion, chopped |
5 | peppercorns |
300 g | frozen chopped spinach, thawed and drained |
1/2 cup | gruyere cheese, shredded |
1/2 cup | mozzarella cheese, shredded |
1/4 cup | milk |
1 tsp | salt |
1/2 tsp | ground black pepper |
2 tbsp | panko bread crumbs |
1 | lemon, cut in thin wedges |
Directions
- Rinse oysters under fresh cold water and place in a large stockpot- is any are open or cracked, discard them.
- Pour in white wine and enough water to cover oysters. Add 1 smashed clove of garlic, peppercorns, and sea salt and bring to a boil. Once boiling, remove from heat, drain, and set aside to cool.
- Preheat oven to 425F.
- Once oysters are cooled, break off and remove the top shell. Arrange oysters on a baking sheet lined with parchment paper.
- Melt butter in a saucepan over medium heat. Stir in chopped onion and minced garlic and cook until soft- about 2 minutes. Reduce heat to low; stir in spinach and cheeses.
- Cook until cheese melts, stirring frequently, then stir in milk and season with salt and pepper. Spoon a dollop of sauce over each oyster, filling the shell, them sprinkle the top with bread crumbs.
- Bake in the oven until golden and bubbly, approximately 8-9 minutes.
- Serve with fresh lemon wedges and pair with a glass of Jost Vineyards’ Tidal Bay.
