Comeau’s Tide Slide

Ingredients
Serves 6 – 12
340 g | Comeua’s Bacon Wrapped Scallops |
12 | Brioche Slider Buns |
142 g | Arugula |
170 g | Crispy Fried Onions |
1/2 cup | Mayonnaise |
1 | Garlic Clove |
2 tsp | Lemon Zest |
2 tbsp | Lemon Juice |
1/2 tsp | Fresh Dill, chopped |
1 tsp | Smoked Paprika |
1 tsp | Local Honey |
1/2 tsp | Dijon Mustard |
Salt, to taste | |
Pepper, to taste |
Directions
- Preheat BBQ or oven to 425F and cook Comeau’s Bacon-Wrapped Scallops per instruction on retail box. Instructions will vary based on chosen cooking method.
- While the scallops cook, slice the slider buns in half and lightly toast.
- Prepare Comeau’s Tide Sauce by mixing mayonnaise, minced garlic, lemon zest, lemon juice, chopped dill, smoked paprika, local honey and Dijon mustard, adding salt and pepper to taste.
- Spread a generous amount of Comeau’s Tide Sauce on the bottom halves of the slider bun. Sprinkle with crispy fried onions.
- Remove toothpicks from the cooked bacon-wrapped scallops and place two or three scallops on each bottom slider bun. Top with arugula mix and additional Comeau’s Tide Sauce, if desired.
- Cover sliders with a top bun, secure with a toothpick and serve immediately.
Optional: For a bit of heat, add a dash of your favourite local hot sauce to the sliders!
