Pork Schnitzel

Ingredients

6 pork cutlets (leg steaks 460g)
1 egg
¼ cup milk
½ cup flour
2 cups seasoned breadcrumbs (salt & pepper)
¼ cup olive oil
1 ½ cups tomato sauce (either homeade or your favourite pasta sauce)
2 cups grated mozzarella cheese
½ cup finely sliced green peppers
½ cup thinly sliced button mushrooms
½ cup diced tomatoes – seeds removed or half grape tomatoes (optional)

Directions

  1. Pound cutlets very thin.
  2. Blend egg and milk.
  3. Dust the cutlets in the flour.
  4. Dip cutlet into egg.
  5. Roll in seasoned bread crumbs.
  6. Heat oil in a large skillet.
  7. Fry cutlets until golden brown on each side( 1.5 to 2.5 minutes per side).
  8. Remove and place on a cookie sheet linedwith parchment paper.
  9. Spoon 30 ml of tomato sauce onto each cutlet.
  10. Sprinkle with cheese, green peppers, mushrooms and tomatoes.
  11. Broil in oven 3 to 5 minutes until golden brown.
  12. Serve Hot.
