Back-to-School: Good Morning Granola Bars
When I worked on Our Children Magazine, I reached out to chef Craig Flinn of Chives Canadian Bistro for kid-friendly recipes to include in the magazine (in 2006). This Good Morning Granola Bar recipe was one of the recipes he sent to me. For the life of me I can’t remember if we used it in the magazine or not…but I stumbled upon it in my recipe collection last week and thought it would be a great back-to-school treat to try.
I adapted the original recipe to include some of our Taste of Nova Scotia products (like Terra Beata cranberries and Valley Flaxflour) and chocolate chips (because I love chocolate). They were phenomenal.
This is a super easy treat to make with your kids. Let them customize the granola bars with their own favourite local ingredients!

Ingredients:
1 cup | butter |
1 | large egg |
1 + 1/2 cup | brown sugar |
3 cups | rolled oats |
1 cup | Valley Flaxflour (original recipe calls for wheat bran) |
1 tsp | baking powder |
1 tsp | ground cinnamon |
1 tsp | vanilla |
1 cup | coconut |
1 cup | raisins |
1/2 cup | chocolate chips |
1/2 cup | cranberries |
(option: If so desired, add 1/2 cup of chopped nuts)
Directions:
- Preheat oven to 375 degrees (190 C).
- Line or grease 9″ x 13″ pan.
- In mixing bowl cream butter, sugar, vanilla, egg and cinnamon.
- In separate bowl combine all other ingredients and mix.
- Add dry ingredients to the wet.
- Bake for 10-15 minutes until set.
- Let cool, cut and serve.
Yields 24 bars
