Back-to-School: Good Morning Granola Bars

When I worked on Our Children Magazine, I reached out to chef Craig Flinn of Chives Canadian Bistro for kid-friendly recipes to include in the magazine (in 2006). This Good Morning Granola Bar recipe was one of the recipes he sent to me. For the life of me I can’t remember if we used it in the magazine or not…but I stumbled upon it in my recipe collection last week and thought it would be a great back-to-school treat to try.

I adapted the original recipe to include some of our Taste of Nova Scotia products (like Terra Beata cranberries and Valley Flaxflour) and chocolate chips (because I love chocolate). They were phenomenal.

This is a super easy treat to make with your kids. Let them customize the granola bars with their own favourite local ingredients!

Ingredients:

1 cup butter
1 large egg
1 + 1/2 cup brown sugar
3 cups rolled oats
1 cup Valley Flaxflour (original recipe calls for wheat bran)
1 tsp baking powder
1 tsp ground cinnamon
1 tsp vanilla
1 cup coconut
1 cup raisins
1/2 cup chocolate chips
1/2 cup cranberries

(option: If so desired, add 1/2 cup of chopped nuts)

Directions:

  1. Preheat oven to 375 degrees (190 C).
  2. Line or grease 9″ x 13″ pan.
  3. In mixing bowl cream butter, sugar, vanilla, egg and cinnamon.
  4. In separate bowl combine all other ingredients and mix.
  5. Add dry ingredients to the wet.
  6. Bake for 10-15 minutes until set.
  7. Let cool, cut and serve.

Yields 24 bars
