Apple Slaw

An Apple a Day
Fresh, tangy and just the right amount of sweet – this apple slaw can be used with our recipe for Apple BBQ Pork Sandwiches, paired with a delicious fish dish or served as the perfect side. Experiment with different apple varieties to find your favourite combination!
Ingredients
1 | Large Nova Scotia apple, cored and julienned |
1/3 cup carrot | Carrot, coarsely grated |
1 cup | Purple cabbage, shaved on mandolin or coarsely grated |
1 Tbsp | Apple cider vinegar |
1 Tbsp | Olive oil |
1 1/2 Tbsp | Mayonnaise |
1 tsp | Sugar |
2 Tbsp | Vegetable oil |
1 tsp | Grainy mustard |
1/2 tsp | Salt |
1/4 tsp | Pepper |
1/2 tsp | Celery Seed |
Directions
- In a mixing bowl combine vinegar, oil, mayonnaise, sugar, mustard, salt, pepper and celery seed.
- Add the apple, carrot, and cabbage to the mixing bowl, toss, taste and add salt if necessary, then refrigerate.
- Eat on your favourite sandwich, as a side or with fried fish.
