An Apple a Day

Fresh, tangy and just the right amount of sweet – this apple slaw can be used with our recipe for Apple BBQ Pork Sandwiches, paired with a delicious fish dish or served as the perfect side. Experiment with different apple varieties to find your favourite combination!

Ingredients

1 Large Nova Scotia apple, cored and julienned
1/3 cup carrot Carrot, coarsely grated
1 cup Purple cabbage, shaved on mandolin or coarsely grated
1 Tbsp Apple cider vinegar
1 Tbsp Olive oil
1 1/2 Tbsp Mayonnaise
1 tsp Sugar
2 Tbsp Vegetable oil
1 tsp  Grainy mustard
1/2 tsp Salt
1/4 tsp  Pepper
1/2 tsp Celery Seed

Directions

  1. In a mixing bowl combine vinegar, oil, mayonnaise, sugar, mustard, salt, pepper and celery seed.
  2. Add the apple, carrot, and cabbage to the mixing bowl, toss, taste and add salt if necessary, then refrigerate.
  3. Eat on your favourite sandwich, as a side or with fried fish.
